| It's a highly appreciated variety of Tuscan origin. It has thin branches with bright green lanceolate leaves. It yields oval medium-sized drupes (1.5/ 2.5 g). This variety is harvested between the last ten days of October and the second ten days of November; at a time when the olives are still green. They yield about 10%-18% of oil. Their "most" is very fruity, it has a piquant taste, sometimes of green apples, cut grass or tomato's skin.
We recommend using it for salads. These olives are harvested before the
right ripening time, in order to have an oil with marked characteristics, even if,
when they're not completely ripe, they give low yields.
This oil has received the "Ercole
Olivario" award from 3 Italian Ministries as SECOND BEST ITALIAN extra
virgin olive oil in the 1999 and 2004. |
